Polysorbate 20, also known as polyoxyethylene (20) sorbitan monolaurate, is composed of sorbitol, ethylene oxide, and lauric acid with molecular formula C58H114O26. At room temperature, it appears as a pale-yellow to yellow viscous liquid. With an HLB value of 16.7, this O/W emulsifier excels at emulsifying and stabilizing oils in water. Polysorbate 20 serves as a solubilizer, penetrant, and dispersant in food, pharmaceutical, and cosmetic formulations. It also functions as a softener, finishing agent, antistatic agent, and lubricant in the textile industry.
