Polysorbate 61, also known as polyoxyethylene (4) sorbitan monostearate, consists of sorbitol, ethylene oxide, and stearic acid. It has a molecular formula of C32H62O10. At room temperature, it appears as a pale-yellow to amber-colored oily liquid or paste. This O/W emulsifier has an HLB value of 9.6 and is soluble in ethanol, ethyl acetate, and toluene, while also being dispersible in water.
