Polyoxyethylene (4) Sorbitan Monolaurate
Polysorbate 21, also known as polyoxyethylene(4) monolaurate, consists of sorbitol, ethylene oxide and lauric acid. It has a molecular formula of C26H50O10. At room temperature, it appears as a pale-yellow to yellow viscous liquid. This O/W emulsifier has an HLB of 13.3 and is soluble in methanol, ethanol, glycol, and ethyl acetate.
